This Mongolian Beef Noodles Recipe is made with simple ingredients, making it a perfect choice for busy weeknights when you need a fast and delicious meal. Packed with rich flavors and hearty noodles, it’s a family favorite that everyone will love!

The Players for Mongolian Beef Noodles Recipe

Ingredients:

  • Noodles – I’ll be using linguine pasta for this Mongolian ground beef noodles recipe, but you can also use thin spaghetti or spaghetti if you prefer!
  • Ground Beef – I use an 80/20 ground beef, but you can use extra-lean ground beef.
  • Onions – Brown, yellow, or white onions will work in this dish.
  • Garlic – My family LOVES garlic!  I use 5-6 garlic cloves, but feel free to use less depending on your family’s taste buds.
  • Brown Sugar – Using dark brown sugar brings out a lovely molasses flavor. But you can use light brown sugar in a pinch!
  • Broth – Adding beef broth or beef stock creates a rich, flavorful sauce for our noodle bowls.
  • Soy Sauce – Low sodium soy sauce adds a nice umami flavor and saltiness.
  • Hoisin Sauce – This is a thick, sweet, and savory Asian sauce, almost similar to a BBQ sauce that you can find at your grocery store.
  • Ginger – I’ve been loving the frozen ginger cubes from Trader Joe’s, but you can also use powdered or fresh ginger as a substitute!
  • Sesame Oil – Feel free to use regular or toasted sesame oil.  This brings a nice nutty taste to our savory sauce.
  • Cornstarch – To get our soy sauce mixture thicker, we’ll need to make a cornstarch slurry.
  • Optional Ingredients – Feel free to “zhuzh up” this Mongolian beef noodles recipe with Sriracha, sesame seeds, green onions, and/or red pepper flakes.

Tools:

  • Skillet – To make these Mongolian noodles, you’ll need either a large cast iron skillet or a large nonstick skillet.  I love using my Staub Cast Iron Braiser! The price is obnoxious, but it was a Christmas gift and absolutely worth every penny.  I also use my braiser in my Creamy Beef and Bowtie Pasta recipe and my Cheesy One Pot Pizza Pasta recipe!

Mongolian Beef Noodles Recipe – Easy Weeknight Meal.

How to make Mongolian Beef Noodles Recipe

Bring a large pot of salted water to a boil. Add the linguine noodles and cook until al dente, about 10 minutes. Before draining, reserve 1 cup of pasta water, then drain the pasta and set it aside.

Cook Beef, Onions, and Garlic

Heat a large skillet over medium heat and brown the ground beef, draining any excess fat. Stir in the diced onions and sauté for 2 minutes until slightly softened. Add the minced garlic and cook for 30 seconds, until fragrant.

Once the beef has browned, add in the diced onions and cook for 2 minutes.

Throw in the minced garlic and cook for about 30 seconds.

Make the Sauce

In a small bowl, mix the sauce ingredients.

Pour in your beef broth.

Add in the sesame oil.

Adding Sriracha adds a nice kick! But this is optional.

Add the sauce to the ground beef and bring to a simmer for 3-4 minutes.

In the same bowl as the sauce ingredients, mix together the cornstarch and water to create a slurry. Pour the cornstarch slurry into the skillet and bring back up to a simmer for an additional 5 minutes. 

Add the Cooked Noodles

Add the cooked noodles to the ground beef and stir the noodles to coat in the sauce.

Give the noodles a good toss in the ground beef and sauce mixture.

Garnish with sesame seeds and green onions, if desired. Enjoy!

If you find your noodles are drying out, add in about 1/4 cup of the reserved pasta water and toss over low heat.

Storage & Reheating Instructions for Mongolian Beef Noodles Recipe

To store, place the noodles into an airtight container and keep in the fridge for up to 4 days.

To reheat:

  • Stovetop
    • Heat a skillet over low heat.
    • Add the Mongolian noodles with ¼ cup of reserved pasta water or beef broth.
    • Stir and heat until warmed through (about 3-5 minutes).
  • Microwave
    • Place noodles in a microwave-safe bowl.
    • Add 1-2 tablespoons of water or broth.
    • Microwave in 30-second intervals, stirring in between, until heated through (about 3 minutes)

Ingredients
  

  • 1 lb linguine pasta can use spaghetti or thin spaghetti

Ground Beef Mixture

  • 1.5 lbs ground beef
  • 1/2 onion, diced
  • 5 garlic cloves, minced

Sauce Ingredients

  • 1/3 cup dark brown sugar or light brown sugar
  • 1/3 cup beef broth
  • 1/2 cup soy sauce
  • 1/3 cup hoisin sauce
  • 2 tsp sesame oil
  • 1 tsp ginger powdered or fresh
  • 1 tsp sriracha, optional

Cornstarch Slurry

  • 2 tsp cornstarch
  • 1 tbsp water

Optional Ingredients

  • sliced green onions
  • sesame seeds

Instructions
 

  • Bring a large pot of salted water to a boil. Add the linguine and cook until al dente, about 10 minutes. Before draining, reserve 1 cup of pasta water*, then drain the pasta and set it aside.
  • Heat a large skillet over medium heat and brown the ground beef, draining any excess fat. Stir in the diced onions and sauté for 2 minutes until slightly softened. Add the minced garlic and cook for 30 seconds, until fragrant.

Notes

*If you like to prepare dinner ahead of time, you may notice the noodles dry out a bit. Before serving, reheat them over low heat, adding ¼ cup of reserved pasta water at a time until they regain their saucy texture.
