What makes this viral chicken cobbler recipe super easy is that you can use leftover chicken from your rotisserie chicken! This would also make for a great leftover turkey casserole for the days following Thanksgiving.
This recipe is essentially almost like a chicken pot pie casserole, but instead of pie crust, we’ll be using biscuit dough, making this a hearty dish!
The Players for this Red Lobster Chicken Cobbler Recipe
Ingredients:
- Butter – We’ll be using half a stick of butter for this easy recipe. You can use unsalted butter if you’d like, but I’ll be using salted butter since that’s what I have in my fridge.
- Biscuit Mix – To make this delicious chicken cobbler, you’ll need one box of Red Lobster Biscuit Mix with the seasoning packet.
- Paprika – This will add a mild pepper flavor to our savory cobbler.
- Garlic – You can use fresh garlic if you’d like, but to make it easy and quick, I’ll be using garlic powder.
- Onion – I’ll be using onion powder for this viral recipe, but you can use freshly diced onions if you prefer.
- Cajun Seasoning – This seasoning has a robust and zesty flavor profile, with a combination of various herbs and spices.
- Milk – I’ll be using whole milk for the biscuit batter, but feel free to use any milk you have in your fridge.
- Chicken – For this creamy chicken recipe, I’ll be using 2 large chicken breasts that I cooked in the Instant Pot.. However, this is a great way to use leftover chicken from your rotisserie chicken if you have it!
- Cheese – cheddar cheese
- Vegetables – You’ll need 1 15-ounce bag of frozen vegetables. I’m using the vegetable mix with corn, peas, carrots, and green beans. But you can use different vegetables if you prefer!
- Cream of Chicken – One can of cream of chicken soup is needed.
- Chicken Broth – You’ll need 1 cup of chicken broth or chicken stock.
- Parsley – This ingredient is optional, but chopped parsley will bring freshness to our chicken pot pie casserole.

How to Make Red Lobster Chicken Cobbler Recipe
Preheat your oven to 375 degrees Fahrenheit. Spray a 13″x9″ baking dish with non-stick cooking spray. Place butter in your greased casserole dish and stick it in the oven to melt. Once the butter has melted, remove the dish from the oven.
In a small bowl, mix together red lobster cheddar bay biscuit mix (with seasoning packet), paprika, garlic powder, onion powder, Cajun seasoning, and 2 cups of milk. Mix well then add in the shredded chicken and shredded cheese. Set aside.
In a separate bowl, stir together mixed frozen vegetables, cream of chicken soup, and chicken broth. Mix well and pour an even layer over the melted butter in the baking dish.
Pour your chicken and biscuit mixture on top of the soup mixture and place into the oven for 55 minutes to one hour. You want the chicken cobbler to be a nice golden brown on top.
Top with freshly chopped parsley over the top of the cobbler topping if desired and allow the casserole to sit for at least 10 minutes before serving. Enjoy!

- Check your casserole at the 30 minute mark. If you find that the top of your chicken cobbler is turning too brown, tent it with foil and allow it cook the rest of the way.
- I wanted to be sure that this wasn’t going to turn into a soggy mess, so I decided to combine the chicken with the biscuit mixture. If you prefer to have the chicken separate from the biscuit topping, mix your chicken in with the soup mixture and cook as directed.
- I know you might be tempted to serve this right away, but allowing the cobbler to sit for at least 10 minutes will allow the soup mixture to set and not run all over the place. I promise you, it will be worth the wait.
Storage and Reheating Instructions
To store your leftover Red Lobster Chicken Cobbler, place it into an airtight container and stick it in the refrigerator for 3-4 days. To reheat, place into the microwave at 50% power for 2-3 minutes, until warmed through.

Ingredients
- 1/4 cup butter (1/2 stick or 4 tablespoons)
Biscuit Mixture
- 1 11.36 oz box of Red Lobster Cheddar Bay Biscuit Mix and Seasonings Packet
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp Cajun seasoning
- 2 cups milk
- 3 cups shredded chicken
- 1 cup shredded cheddar cheese
Soup Mixture
- 1 15 oz frozen bag of mixed vegetables (carrots, corn, green beans)
- 1 10 oz can Cream of Chicken soup
- 1 cup chicken broth
- fresh chopped parsley optional
Instructions
- Preheat oven to 375 degrees Fahrenheit. Spray a 13" x 9" baking dish with non stick cooking spray. Add your 1/2 stick of butter to the dish and place in the oven to melt.
- Once the butter has melted, remove the pan from the oven.
- In a small mixing bowl, mix together biscuit mix, seasonings packet, seasonings, milk, shredded chicken, and shredded cheese. Set aside for 5 minutes while you prepare the soup mixture.
- To a large mixing bowl, stir together frozen mixed vegetables, cream of chicken soup, and chicken broth. Mix well and pour over the butter in the baking dish.
- Pour your chicken and biscuit mixture over the soup and veggies mixture.
- Bake for 55-60 minutes until golden brown. Allow the casserole to sit for at least 10 minutes before serving. Enjoy!

Thank you for this recipe, I made it and it was tasty. I do however recommend that if you don’t want the dish to be too “bready!, use half of the Red lobster mix and make extra cream of chicken soup/sauce to set aside for topping if needed. I ate most of the dish myself, but I am a lover of potpies and Red Lobsters cheddar biscuits.

Im making this for dinner for tomorrow night. As well as to share with my elderly neighbors. I added two red potatoes cut up in chunks. Do you think they will cook in the chicken pot pie ok?
