Made with simple ingredients like ground beef, taco seasoning, and tender potatoes, these burritos are budget-friendly, easy to prep, and sure to satisfy everyone at the table. Wrap the savory filling in warm flour tortillas, and dinner is done in under 30 minutes!

While the beef and potato mixture is great in tortillas, you can easily serve this over Mexican rice or on top of tortilla chips to make loaded nachos, yummy!

  • Ground Beef – My family enjoys ground beef, but you can swap it for ground turkey or chicken if you’d like a lighter option.
  • Potatoes – Russet potatoes are something I always have on hand, but Yukon Golds work well too. They add heartiness and make this meal stretch.
  • Taco Seasoning – A store-bought packet works perfectly, or use homemade taco seasoning if you have it. I’ll leave a quick recipe down below.
  • Beef Broth – About 2 cups of broth helps simmer the potatoes and creates a flavorful base.

How to Make Easy Beef and Potato Burritos

In a large saucepan over medium-high heat, brown the ground beef until no longer pink. Drain excess grease if needed. I like taking a paper towel or two to soak up the fat.

Stir in the taco seasoning, diced potatoes, and beef broth. Bring to a simmer.

Cook uncovered for about 20 minutes, stirring occasionally, until the potatoes are tender and most of the liquid has cooked down.  It’s fine if a little liquid remains in the skillet.

Bring the beef and potato mixture up to a simmer, and simmer uncovered for 20 minutes.

Spoon the beef and potato mixture into warm flour tortillas. Roll them up and serve, or add your favorite toppings. Or serve the mixture over greens or rice as a burrito bowl. I’ll leave some topping suggestions down below.

Cook the mixture until the potatoes are tender and there’s not much liquid left in the skillet.

Storage Instructions for Beef and Potato Burritos

To Store: Place the cooled beef and potato mixture in an airtight container or wrap burritos individually in foil. Store in the refrigerator for up to 3 days.

To Reheat: Warm in the microwave for 1–2 minutes on 50% power. Alternatively, you can reheat in a skillet over low heat until warmed through.

Homemade Taco Seasoning Packet Recipe

Sometimes I forget to buy the store-bought taco seasoning packet, but I always have all the spices on hand to make my own.  Here’s how I make mine:

  • 2 teaspoons chili powder
  • 2 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon oregano
  • 2 teaspoons flour
  • ½ teaspoon salt

Combine all of the spices together in a small bowl. This amount equals one taco seasoning packet.

  • 1 taco packet seasoning (or 3 tablespoons from a bulk container)
  • 2 cups beef broth
  • 1 russet potato, peeled and diced
