Easy 4-Ingredient Beef and Potato Burritos Recipe

This easy 4-ingredient beef and potato burritos recipe is the perfect weeknight dinner idea when you need something hearty, filling, and family-friendly.

Ingredients
  

  • 1.34 pounds ground beef
  • 1 taco packet seasoning (or 3 tablespoons from a bulk container)
  • 2 cups beef broth
  • 1 russet potato, peeled and diced

Instructions
 

  • In a large saucepan over medium-high heat, brown the ground beef until no longer pink. Drain the excess fat.
  • Stir in the taco seasoning, diced potatoes, and beef broth. Bring to a simmer.
  • Cook uncovered for about 20 minutes, stirring occasionally, until the potatoes are tender and most of the liquid has cooked down.  It’s fine if a little liquid remains in the skillet.
  • Spoon the beef and potato mixture into warm flour tortillas. Roll them up and serve, or add your favorite toppings. Or serve the mixture over greens as a taco bowl.

Notes

To Store: Place the cooled beef and potato mixture in an airtight container or wrap burritos individually in foil. Store in the refrigerator for up to 3 days.
To Reheat: Warm in the microwave for 1–2 minutes on 50% power. Alternatively, you can reheat in a skillet over low heat until warmed through.
