- 1.34 pounds ground beef
- 1 taco packet seasoning (or 3 tablespoons from a bulk container)
- 2 cups beef broth
- 1 russet potato, peeled and diced
In a large saucepan over medium-high heat, brown the ground beef until no longer pink. Drain the excess fat.
Stir in the taco seasoning, diced potatoes, and beef broth. Bring to a simmer.
Cook uncovered for about 20 minutes, stirring occasionally, until the potatoes are tender and most of the liquid has cooked down. It’s fine if a little liquid remains in the skillet.
Spoon the beef and potato mixture into warm flour tortillas. Roll them up and serve, or add your favorite toppings. Or serve the mixture over greens as a taco bowl.
To Store: Place the cooled beef and potato mixture in an airtight container or wrap burritos individually in foil. Store in the refrigerator for up to 3 days.
To Reheat: Warm in the microwave for 1–2 minutes on 50% power. Alternatively, you can reheat in a skillet over low heat until warmed through.
