Ingredients:

How to Make Strawberry Lemon Bars

Make the Strawberry Lemon Bar Batter
In a large bowl, whisk together the melted butter and sugar until smooth.


Add the egg and vanilla extract, mixing until fully combined.


Stir in the lemon zest and lemon juice.


Add the flour, baking powder, and salt. Mix just until combined.

- 1/2 cup butter, melted 1 stick
- 3/4 cup sugar
- 1 egg
- 1 tsp vanilla extract
- 1 tbsp lemon zest
- 2 tbsp lemon juice
- 1 1/4 cups flour + 1 tbsp divided
- 1 tsp baking powder
- 1/4 tsp salt
- 1 cup strawberries, diced
Sweet Lemon Glaze
- 1 1/4 cup powdered sugar
- 1-2 tbsp lemon juice
Instructions
- Preheat your oven to 350°F and line your 8"x8" baking dish with parchment paper. Set aside.
- In a large bowl, whisk together the melted butter and sugar until smooth. Add the egg, vanilla extract, lemon zest, and lemon juice and mix well.
- Add the flour, baking powder, and salt. Mix just until combined.
- Toss your diced strawberries with one tablespoon of flour, then gently fold them into the batter.
- Spread the batter evenly into your prepared pan.
- Bake for about 28-30 minutes, or until the edges are lightly golden and the center is set.
- Allow the bars to cool in the pan for 15 minutes before moving to a wire rack to cool completely before adding the glaze.
