If you’ve ever tried Entenmann’s Little Bites Muffins, you now how much kids love them!  But personally, I’ve always found them really oily, too moist (almost wet?) and has a chemical taste to them, which is not appealing.

In an effort to buy less processed lunchbox treats at the grocery store, making these little muffins at home using this simple recipe will make your whole family happy! This homemade little bites muffin recipe offers a fluffy texture with the right amount of sweet chocolate chips.

And the best part?  These delicious muffins freeze wonderfully!  So you can make a full batch of 24 muffins and freeze them for future lunch box treats!

The Players for Little Bites Muffins Recipe

Ingredients:

  • Butter – We’ll be using one stick of melted butter for this mini muffin recipe.  You can melt the butter in the microwave or on the stove-top, but allow the butter to cool for a few minutes before incorporating the other wet ingredients.
  • Sugar – White granulated sugar is what you’ll need.
  • Eggs – You’ll need 2 room temperature eggs.
  • Vanilla – Pure vanilla extract will bring warmth and sweetness to our little bites muffins recipe.
  • Milk – To make this easy recipe, you’ll need 1/2 cup milk. I use whole milk because that’s what we drink but feel free to use what you have on hand.
  • Flour – You’ll need plain all purpose flour for these mini chocolate chip muffins.
  • Baking Powder – Using baking powder will help make these muffins tall and tender.
  • Salt – Using just a bit of salt will help bring all of the flavors together.
  • Chocolate Chips – To make these little bites chocolate chip muffins, you’ll need mini chocolate chips.

Tools:

  • Muffin Tin – You’ll need a mini muffin tin to make a batch of these yummy mini homemade muffins.
  • Paper Liners – I’ll be making this muffin recipe without liners, but you can certainly use mini cupcake liners if you’d like!

How to make Little Bites Muffins Recipe

Preheat oven to 375 degrees Fahrenheit and spray a mini muffin pan with nonstick spray and set aside.

In a large bowl, add the cooled, melted butter.  Stir in the sugar, eggs, vanilla extract, and milk.

To the same bowl, add your dry ingredients of flour, baking powder, and salt and mix well.  Stir in your mini chocolate chips.  You can also use regular chocolate chips if you’d like, but start with 1/4 cup first and increase the amount as needed.

Fill the mini muffin tins to the top with the muffin batter and additional chocolate chips to the tops if you’d like. Bake for the little bites muffins for 12 minutes until the edges are golden brown.  Remove from the oven and place on a wire rack and allow the chocolate chip mini muffins to cool in the pan for 5 minutes.  Move the warm muffins to a cooling rack to cool completely. 

Storage and Freezing Instructions for Little Bites Muffins Recipe

To store leftover little bites mini muffins, place them into an airtight container and keep them on the counter for up to 4 days.

To freeze them, wrap the cooled muffins in plastic wrap and place them into a freezer ziplock bag. They will keep in the freezer for up to 2 months. 

To thaw, pull the amount of muffins you’d like out of the freezer and allow them to defrost on the counter for an hour or two before eating.

  • 1/2 cup butter, melted and cooled
  • 2/3 cup sugar
  • 2 eggs, room temperature
  • 1 tsp vanilla extract
  • 1/2 cup milk, room temperature
  • 1 1/2 cup flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/3 cup mini chocolate chips plus extra for the tops, if desired

Instructions
 

  • Preheat oven to 375 degrees Fahrenheit and spray a mini muffin tin with non-stick spray or with paper liners. Set aside.
  • In a large bowl, add the cooled, melted butter.  Stir in the sugar, eggs, vanilla extract, and milk.
  • To the same bowl, add flour, baking powder, and salt and mix well.  Stir in your mini chocolate chips.  
  • Fill the mini muffin tins to the top with the muffin batter and top with additional mini chocolate chips, if desired. Bake for 12 minutes until the edges are golden brown.  
  • Remove from the oven and place on a wire rack and allow the muffins to cool in the pan for 5 minutes.  Move the warm muffins to a cooling rack to cool completely. Enjoy!

    1. Oh no Kelsey! Yes sugar is definitely in the recipe, the second ingredient under the melted butter (and also in step #2). Hopefully the chocolate chips brought enough sweetness to the muffins!

    1. If you’re looking to store them for long-term, I would highly recommend freezing them! Place the cooled muffins on a wire rack and flash freeze them in the freezer for 30 minutes. Transfer them to a freezer ziplock and they’re good for a while! When you want a treat, just place them on the counter for an hour to defrost. Hope you enjoy the recipe!

    My 3 year old and I have so much fun making these. We swapped the chocolate chips for some cinnamon and it was SO good.

    This recipe is so easy. Got everything out and ready. While milk and eggs came to room temp. Cooked that melted butter. I did sprinkle a few more chips on top.
    Great snack to go for the kiddos.

    Excellent recipe! I didn’t have vanilla extract, so I substituted raw honey. Made it extra sweet (pleasantly). Will be making this again with different flavors!
