Mini Chocolate Chip Muffins (Little Bites Copycat Recipe)

This delicious Copycat Little Bites Muffins recipe is the perfect snack for your kid's lunch box!  Using real ingredients, these mini chocolate chip muffins are bite-sized, making them ideal for a school snack.

Ingredients
  

  • 1/2 cup butter, melted and cooled
  • 2/3 cup sugar
  • 2 eggs, room temperature
  • 1 tsp vanilla extract
  • 1/2 cup milk, room temperature
  • 1 1/2 cup flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/3 cup mini chocolate chips plus extra for the tops, if desired

Instructions
 

  • Preheat oven to 375 degrees Fahrenheit and spray a mini muffin tin with non-stick spray or with paper liners. Set aside.
  • In a large bowl, add the cooled, melted butter.  Stir in the sugar, eggs, vanilla extract, and milk.
  • To the same bowl, add flour, baking powder, and salt and mix well.  Stir in your mini chocolate chips.  
  • Fill the mini muffin tins to the top with the muffin batter and top with additional mini chocolate chips, if desired. Bake for 12 minutes until the edges are golden brown.  
  • Remove from the oven and place on a wire rack and allow the muffins to cool in the pan for 5 minutes.  Move the warm muffins to a cooling rack to cool completely. Enjoy!
