In a large saucepan over medium-high heat, brown the ground beef until no longer pink. Drain excess grease if needed. I like taking a paper towel or two to soak up the fat.

Stir in the taco seasoning, diced potatoes, and beef broth. Bring to a simmer.




Cook uncovered for about 20 minutes, stirring occasionally, until the potatoes are tender and most of the liquid has cooked down. It’s fine if a little liquid remains in the skillet.
