This Lester’s-inspired Arkansas Possum Pie Recipe is the perfect dessert for those warm summer months when you’re wanting a cool treat to eat! And don’t worry, there’s no actual possum in this recipe.

Lester’s Arkansas Possum Pie Recipe
My family loves to do themed movie nights. And for this particular movie night, we were watching Disney’s, “A Goofy Movie” for our family movie dinner night. In the movie, Goofy and Max are taking a road trip and they make a pit stop at an attraction called Lester’s Possum Park. It’s basically a spin-off of Walt Disney’s World Country Bear Jamboree. While there was no actual food shown in this scene, I would imagine, that this pie would be a bestseller at Lester’s Possum Park.
A traditional Arkansas Possum Pie Recipe is made with a shortbread crust with nuts, chocolate pudding, and chocolate shavings, I decided to recreate a more kid-friendly version of this pie by making a graham cracker crust and leaving out the nuts entirely, making a ‘tuxedo’ pudding, and adding a tiny bit of chocolate chips on top of the whipped cream.
Once you make all of the different layers of this chocolate layer pie, this delicious dessert comes together really quickly.
The Players for Lester’s Arkansas Possum Pie Recipe
Graham Cracker Crust:
- Graham Crackers – This is what makes that delicious crust that pairs well with all of the cream layers in the Arkansas Possum Pie Recipe.
- Sugar – White granulated sugar helps sweeten our crust.
- Butter – We’ll be melting 6 tablespoons of butter for our pie crust mixture.
Cream Cheese Layer
- Cream Cheese – Leave your cream cheese out on the counter for about 30 minutes before making this pie so that it’s softened.
- Powdered Sugar – This brings sweetness to our cream cheese layer.
- Vanilla Extract – Using Vanilla extract in baking brings all of our flavors together and brings a nice warmth to the pie.
- Heavy Cream – If you don’t have whipping cream, you can use half and half if you’d like.
Pudding Layer
- Instant Chocolate Pudding Mix – You’ll need a small 3.4-ounce box of chocolate instant pudding mix and pie filling. Follow the instructions on the box on how to prepare your pudding.
- Instant Vanilla Pudding Mix – You’ll need a small 3.4-ounce box of vanilla instant pudding mix and pie filling. Follow the instructions on the box on how to prepare your pudding.
Whipped Cream Layer
- Heavy Cream – Cold heavy whipping cream is the best for making homemade whipped cream.
- Sugar -Just a teaspoon of granulated white sugar is all you’ll need.
- Chocolate Chips – Topping off Lester’s Arkansas Possum Pie will be that much better with a sprinkling of chocolate chips! But of course, you don’t have to if prefer to leave them off.

- Deep Pie Plate – You’ll need a deep pie dish for this recipe. I like to use glass, see-through pie dishes like these!
How to Make Lester’s Arkansas Possum Pie Recipe
Make the Crust
We first need to make the nut-free crust. In a food processor, add in your graham crackers and pulse until they create a fine crumb. Additionally, you can add your graham crackers to a gallon ziplock bag and beat with a rubber mallet or roll with a rolling pin to make the crumbs.
In a small bowl, add your graham cracker crumbs, sugar, and melted butter and combine until you get a sandy mixture. To the bottom of a pie pan, press mixture into the bottom and up the sides of your pie dish. Set aside while you make the other pie layers.
Make the Cream Cheese Layer
In a separate medium bowl, mix cream cheese for a minute or so. Add in your powdered sugar and vanilla extract and mix the cream cheese mixture well. Slowly begin incorporating a tablespoon at a time of your heavy cream. You want the cream cheese mixture to be a medium consistency, so you shouldn’t need to use more than 3 tablespoons of heavy cream. If it gets too thin, add an additional 1/4 cup of confectioners’ sugar. Spread the cream cheese mixture on top of the pie crust.
Prepare Puddings
In separate small bowls, prepare your instant puddings according to the directions on the box. I always use whole milk when making pudding, to get the full creamy flavor. If you prefer, you can combine the two puddings together to make a ‘tuxedo’, or create separate layers.
I tried to make a ‘marbling’ effect, by alternating dollops of vanilla pudding and chocolate pudding, then swirling them together. Additionally, you can always make your own pudding, but I was trying to keep this recipe super easy, where even the kids could help make this, which my boys did help with. Regardless, whichever way you decide to do you will be delicious!
Add your vanilla pudding and chocolate pudding layer on top of the cream cheese layer and spread evenly.
Make the Homemade Whipped Cream
In an electric mixer or mixing bowl, add your cold 1 cup heavy whipping cream to a large bowl. Whisk your heavy cream on high for about 2-3 minutes. Add in your sugar, and whisk for an additional minute or until you see stiff peaks in your bowl.
Top the surface of the pudding with your freshly made whipped cream and sprinkle with chocolate chips if desired. Additionally, you can dust the top of the cake with an 1/8 cup cocoa powder, or leave it off entirely.
Chill the pie for at least 20 minutes (1 hour would be better!) before slicing and serving. Enjoy!

Store this yummy no-bake pie in the fridge for 3-4 days and cover your pie tightly with plastic wrap.

Lester’s Arkansas Possum Pie Recipe (A Goofy Movie)
Ingredients
Graham Cracker Crust
- 1 1/2 cups graham crackers, finely crushed about 1 sleeve of graham crackers
- 1/3 cup sugar
- 6 tbsp butter, melted
Cream Cheese Layer
- 8 oz cream cheese, softened
- 3/4 cup powdered sugar
- 1 tsp vanilla extract
- 3 tbsp heavy cream
Pudding Layer
- 3 oz chocolate pudding box, prepared
- 3 oz vanilla pudding box, prepared
Whipped Cream
- 1 cup heavy cream, chilled
- 1 tsp sugar
- 1/2 cup chocolate chips optional
Instructions
- In a food processor or large ziplock bag, crush your graham crackers into a fine crumb.
- In a small bowl, add your graham cracker crumbs, sugar, and melted butter and combine until you get a sandy mixture. Press graham cracker mixture into the bottoms and sides of a 9 inch pie pan. Set aside.
- In a medium bowl, beat softened cream cheese with a handheld mixer. Add in powdered sugar, vanilla extract and a tablespoon at a time of heavy cream, until you get a creamy consistency. Add cream cheese mixture to the bottom of the graham cracker crust and spread evenly.
- Make both the chocolate and vanilla pudding according to the instructions on the box. Add your puddings on top of the cream cheese layer and spread evenly.
- In a large mixing bowl, add in your cold heavy cream and whisk heavy cream on high for 2 minutes. Add in your sugar and whip for another minute or until your whipped cream has peaks. Add to the top of the pudding layer and spread evenly.
- Top with chocolate chips if desired, and allow the pie to chill for at least 20 minutes. Enjoy!
