This easy one-skillet chicken dish offers a comforting and homey taste, making it a popular choice for a warm, satisfying dinner the whole family will enjoy!
Juicy chicken and russet potatoes cooked in a creamy herb sauce is the perfect one-pan meal for busy weeknights. This ultimate comfort food makes a delicious meal for the entire family, including your pickiest of eaters.
The Players for Creamy Chicken and Herby Potato Skillet
Ingredients:
- Olive Oil – I like using extra virgin olive oil, but you can use canola oil if you prefer.
- Chicken – For this recipe, I’m using boneless skinless chicken breasts that are cut into bite-sized pieces. You can also use skinless chicken thighs if you’d like!
- Butter – I prefer using salted butter when cooking and baking.
- Onion – You can use any type of onion you’d like: red, yellow, or brown. For this recipe, I’ll be using 1/2 of a brown onion. Alternatively, you can use onion powder.
- Garlic – I love the taste of freshly minced garlic in dishes, but you can use garlic powder if you’re in a hurry.
- Flour – Using all-purpose flour will help to thicken the creamy garlic sauce.
- Chicken Broth – This will help bring a lot of flavor to this easy creamy herb chicken dish.
- Heavy Cream – To make this creamy chicken recipe, you’ll need to use milk. Heavy cream, whole milk, half and half, skim milk, or any combination works.
- Potatoes –Â You can use any type of potatoes you’d like. Â I’m using russet potatoes that I’ve skinned and diced finely. Â
- Herbs – Use any type of fresh herbs that you have on hand including fresh Thyme leaves, Sage, fresh Rosemary, fresh Oregano, Basil, fresh Parsley, etc.
- Parmesan Cheese – Adding freshly grated Parmesan cheese will make this garlic Parmesan cream sauce incredible!
- Salt & Pepper – Season your creamy chicken and herby potato skillet dish to taste as needed.
Tools:
- Large Skillet – You’ll need a large skillet with a lid or Dutch oven to make this creamy herb chicken recipe! I’m using my favorite Staub Cast Iron Skillet for this skillet dinner.
How to Make Creamy Chicken and Herby Potato Skillet
In a large skillet or Dutch oven over medium heat, add in your olive oil. Add in your bite-sized chicken pieces and saute for about 5 minutes. Your chicken won’t be fully cooked, but we want a nice golden brown color on the outside. Season with salt and pepper to taste, and remove the chicken from the skillet onto a bowl or plate, and cover with foil to keep warm.
To the same skillet (don’t clean it out – there might be some juices and seasonings in there and that’s okay!), add your butter and melt. Saute your chopped onions for a few minutes or until they are translucent.
Toss in your fresh garlic for 30 seconds and add in your flour. Cook your flour for a few minutes and then add in your chicken broth, followed by the heavy cream.
Simmer the mixture
Allow the mixture to come to a simmer, and throw in your diced potatoes along with all of the herbs, and the chicken along with any juices that have accumulated in the bowl.
Bring the mixture back up to a simmer, lower the heat, cover with a lid, and allow the potatoes to cook for 30 minutes. Â Every once in a while, give your potatoes and chicken a stir to ensure they are not sticking to the bottom of the skillet. Â
You will know when the potatoes are done when you stick a fork or knife into a potato and it’s tender. Add in your grated Parmesan cheese along with additional salt and pepper.
Top with extra chopped sage or thyme if desired. Enjoy!
Storage Instructions
To store your creamy garlic herb chicken leftovers, place it into an airtight container or cover it with plastic wrap and store it in the refrigerator for 3-4 days.

Easy Creamy Chicken and Herby Potato Skillet Recipe
Ingredients
- 2 tbsp olive oil
- 2 lbs chicken breasts, cut into bite sized pieces
- 3 tbsp butter
- 1/2 onion, diced
- 4 garlic cloves, minced
- 1/4 cup flour
- 1 1/4 cup chicken broth
- 1 cup heavy cream
- 2 medium russet potatoes, peeled and diced
- 1 tsp thyme
- 1 tsp sage
- 1 tsp rosemary
- 1/2 cup grated Parmesan cheese
- salt and pepper, to taste
Instructions
- In a large skillet over medium heat, add olive oil and brown cubed chicken pieces for about 5 minutes. Season with salt and pepper. Remove chicken from skillet.
- In the same skillet, melt butter and saute diced onions until translucent, about 3 minutes. Add in your minced garlic and saute for 30 seconds. Whisk in your flour and cook for 3 minutes.
- Whisk in your chicken broth and heavy cream and allow the mixture to come up to a simmer. Add in your diced potatoes, herbs, and chicken back to the skillet. Bring the mixture back up to a simmer, lower the heat, and cover with a lid and cook for 30 minutes, stirring occasionally.
- Once the potatoes are fork tender, add in your grated Parmesan cheese and stir well. Season with additional salt and pepper as needed. Enjoy!
