Easy Creamy Chicken and Herby Potato Skillet Recipe

This Creamy Chicken and Herby Potato Skillet is a delicious and comforting dish that combines the flavors of tender chicken, creamy sauce, and fragrant herbs with hearty potatoes.

Ingredients
  

  • 2 tbsp olive oil
  • 2 lbs chicken breasts, cut into bite sized pieces
  • 3 tbsp butter
  • 1/2 onion, diced
  • 4 garlic cloves, minced
  • 1/4 cup flour
  • 1 1/4 cup chicken broth
  • 1 cup heavy cream
  • 2 medium russet potatoes, peeled and diced
  • 1 tsp thyme
  • 1 tsp sage
  • 1 tsp rosemary
  • 1/2 cup grated Parmesan cheese
  • salt and pepper, to taste

Instructions
 

  • In a large skillet over medium heat, add olive oil and brown cubed chicken pieces for about 5 minutes. Season with salt and pepper. Remove chicken from skillet.
  • In the same skillet, melt butter and saute diced onions until translucent, about 3 minutes. Add in your minced garlic and saute for 30 seconds. Whisk in your flour and cook for 3 minutes.
  • Whisk in your chicken broth and heavy cream and allow the mixture to come up to a simmer. Add in your diced potatoes, herbs, and chicken back to the skillet. Bring the mixture back up to a simmer, lower the heat, and cover with a lid and cook for 30 minutes, stirring occasionally.
  • Once the potatoes are fork tender, add in your grated Parmesan cheese and stir well. Season with additional salt and pepper as needed. Enjoy!
