Easy Creamy Chicken and Herby Potato Skillet Recipe

- 2 tbsp olive oil
- 2 lbs chicken breasts, cut into bite sized pieces
- 3 tbsp butter
- 1/2 onion, diced
- 4 garlic cloves, minced
- 1/4 cup flour
- 1 1/4 cup chicken broth
- 1 cup heavy cream
- 2 medium russet potatoes, peeled and diced
- 1 tsp thyme
- 1 tsp sage
- 1 tsp rosemary
- 1/2 cup grated Parmesan cheese
- salt and pepper, to taste
In a large skillet over medium heat, add olive oil and brown cubed chicken pieces for about 5 minutes. Season with salt and pepper. Remove chicken from skillet.
In the same skillet, melt butter and saute diced onions until translucent, about 3 minutes. Add in your minced garlic and saute for 30 seconds. Whisk in your flour and cook for 3 minutes.
Whisk in your chicken broth and heavy cream and allow the mixture to come up to a simmer. Add in your diced potatoes, herbs, and chicken back to the skillet. Bring the mixture back up to a simmer, lower the heat, and cover with a lid and cook for 30 minutes, stirring occasionally.
Once the potatoes are fork tender, add in your grated Parmesan cheese and stir well. Season with additional salt and pepper as needed. Enjoy!
