Gooey Cast Iron Skillet S'mores Pie Recipe

Bring the flavors of campfire s'mores indoors with this easy Cast Iron Skillet S'mores Pie. Featuring layers of graham cracker crumble, melted chocolate, and toasted marshmallows, this warm and gooey dessert is perfect for summer nights and family gatherings.

Ingredients
  

  • 1/2 cup butter, softened
  • 3/4 cup brown sugar, packed
  • 1 tsp vanilla extract
  • 3/4 cup old-fashioned oats
  • 3/4 cup flour
  • 3/4 cup graham cracker crumbs (about 5 graham cracker sheets)
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 cups large marshmallows, halved crosswise (about 15 marshmallows)
  • 3 chocolate bars, divided (coarsely chop 2 bars for the filling; reserve the remaining bar for topping, if desired)

Instructions
 

  • Preheat the oven to 350°F. Lightly grease a 10-inch cast iron skillet with butter or nonstick cooking spray.
  • In a large mixing bowl, beat the softened butter, brown sugar, and vanilla together until light and fluffy.
  • Add the oats, flour, graham cracker crumbs, baking powder, and salt. Mix until a crumbly dough forms.
  • Press about two-thirds of the crumble mixture firmly into the bottom of the prepared skillet.
  • Arrange the halved marshmallows in a single layer of marshmallows over the crust. Sprinkle the two coarsely chopped chocolate bars evenly over the marshmallows. Crumble the remaining graham cracker mixture over the top.
  • Place the skillet on the middle rack of the preheated oven and bake for 20 to 22 minutes, or until the topping is lightly golden brown and the marshmallows are melted.
  • Allow the pie to cool for 15 minutes. If desired, break the remaining chocolate bar into pieces and arrange them over the warm pie before serving. Enjoy!

Notes

Recipe Notes

  • Be sure to use old-fashioned rolled oats for the best texture. Quick oats can make the topping too soft.
  • The third chocolate bar is optional but adds extra chocolatey goodness when placed on top after baking.
  • This dessert is best enjoyed warm while the chocolate is melty and the marshmallows are soft and gooey.

Storage and Reheating Instructions

To Store:
Store any leftover Cast Iron Skillet S'mores Pie tightly covered at room temperature for up to 2 days. Keep in mind that the marshmallows will become firmer as the dessert cools and is stored.
To Reheat:
Reheat individual servings in the microwave for 15 to 20 seconds, or until the chocolate and marshmallows are soft and melty again.
