Ingredients

  • 1 1/2 lbs shrimp, deveined and rinsed
  • 3 tbsp butter
  • 1 shallot, minced
  • 4 garlic cloves, minced
  • 3 tbsp flour
  • 1 cup vegetable broth
  • 1 tbsp tomato paste
  • 1 tsp Worcestershire sauce
  • 1 tbsp Cajun seasoning
  • 1 tsp paprika
  • 1/2 tsp red pepper flakes
  • 1 cup heavy cream
  • 1 cup Parmesan cheese, grated
  • salt and pepper to taste

Instructions

  • In a large skillet over low heat, melt butter. To the melted butter, add your diced shallots and saute for 2 minutes.  Add in your minced garlic and cook for 30 seconds.
  • Sprinkle in your flour and cook the flour for 2 minutes. Add in your vegetable broth and whisk well, breaking up any lumps that may have formed from the flour.  Whisk until smooth.
  • Add in your tomato paste, Worcestershire sauce, and all of the seasonings, and allow the mixture to come up to a simmer for 5 minutes.
  • Pour in the heavy cream and your grated Parmesan* cheese.  Allow the mixture to come back up to a simmer, and once it begins simmering, add in your uncooked shrimp.
  • Cook shrimp for 5 minutes. Serve over pasta or rice. Enjoy!

Notes

*I found a block of Cajun cheese at my local Aldi, so subbed the Parmesan cheese for that, and it was delicious!
