One-Bowl Fudgy Espresso Brownies (Starbucks Copycat)

- 4 oz unsweetened chocolate, chopped
- 1 3/4 cups sugar
- 3/4 cup canola oil
- 2 oz espresso, cooled
- 2 tsp espresso powder
- 2 tsp vanilla extract
- 4 eggs room temperature, beaten
- 1 cup flour
- 1/4 cup cocoa powder
- 2 cups chocolate chunks, divided
Place your oven rack in the middle of the oven and preheat your oven to 350 degrees Fahrenheit. Take a 13"x9" baking dish and line it with parchment paper, spray with non-stick cooking spray, and set aside.
Using a double boiler, add your unsweetened chocolate that's been roughly chopped into a large bowl and stir continuously with a rubber spatula until the chocolate has melted.
To your melted chocolate, add in your sugar and oil and whisk. Stir in your cooled espresso, espresso powder, and vanilla extract. Add in your large beaten eggs and whisk well.
Add your flour and cocoa powder to the mixture and stir until the flour and cocoa powder has been incorporated fully. Stir in 1 1/2 cups of the chocolate chunks.
Pour the brownie batter into your prepared baking pan. Sprinkle the remaining 1/2 cup of chocolate chunks evenly over the batter.
Bake brownies for 25-28 minutes. Allow to cool completely on wire rack before cutting. Enjoy!
