One-Bowl Fudgy Espresso Brownies (Starbucks Copycat)

Ingredients
  

  • 4 oz unsweetened chocolate, chopped
  • 1 3/4 cups sugar
  • 3/4 cup canola oil
  • 2 oz espresso, cooled
  • 2 tsp espresso powder
  • 2 tsp vanilla extract
  • 4 eggs room temperature, beaten
  • 1 cup flour
  • 1/4 cup cocoa powder
  • 2 cups chocolate chunks, divided

Instructions
 

  • Place your oven rack in the middle of the oven and preheat your oven to 350 degrees Fahrenheit. Take a 13"x9" baking dish and line it with parchment paper, spray with non-stick cooking spray, and set aside.
  • Using a double boiler, add your unsweetened chocolate that's been roughly chopped into a large bowl and stir continuously with a rubber spatula until the chocolate has melted.
  • To your melted chocolate, add in your sugar and oil and whisk. Stir in your cooled espresso, espresso powder, and vanilla extract. Add in your large beaten eggs and whisk well.
  • Add your flour and cocoa powder to the mixture and stir until the flour and cocoa powder has been incorporated fully. Stir in 1 1/2 cups of the chocolate chunks.
  • Pour the brownie batter into your prepared baking pan. Sprinkle the remaining 1/2 cup of chocolate chunks evenly over the batter.
  • Bake brownies for 25-28 minutes. Allow to cool completely on wire rack before cutting. Enjoy!
