Lemon Cake
- 1 box lemon cake mix (13.25 oz)
- 1 pkg lemon jello (3 oz)
- 3/4 cup water
- 3/4 cup canola or vegetable oil
- 4 eggs, room temperarture
- 1/2 tsp lemon extract
Lemon Icing
- 2 tbsp butter, melted
- 2 cups powdered sugar
- zest and juice of 2 lemons (about 1/3 cup juice)
Preheat your oven to 350 degrees Fahrenheit and spray a 9 x13-inch pan with nonstick cooking spray and set it aside.
In a large bowl using a whisk or hand mixer, whisk together the box cake mix, the lemon jello, 3/4 cup water, 3/4 cup oil, eggs, and lemon extract.
Pour the cake batter into your prepared baking dish and bake your lemon poke cake for 28-30 minutes.
While the cake is baking, make the lemon icing. In a small bowl, whisk together the melted butter, confectioners’ sugar, lemon juice, and lemon zest.
Once the cake is done baking, place the cake on a wire rack. Poke holes all over the hot cake using either a toothpick or a fork. Pour the glaze over the warm cake and allow the cake to cool completely before serving.
