Old Fashioned Jello Lemon Cake Recipe

This Old Fashioned Jello Lemon Cake recipe is fast and easy to bake!  Using boxed cake mix and a few other ingredients, this moist cake can be on your countertop in under 40 minutes!

Ingredients
  

Lemon Cake

  • 1 box lemon cake mix (13.25 oz)
  • 1 pkg lemon jello (3 oz)
  • 3/4 cup water
  • 3/4 cup canola or vegetable oil
  • 4 eggs, room temperarture
  • 1/2 tsp lemon extract

Lemon Icing

  • 2 tbsp butter, melted
  • 2 cups powdered sugar
  • zest and juice of 2 lemons (about 1/3 cup juice)

Instructions
 

  • Preheat your oven to 350 degrees Fahrenheit and spray a 9 x13-inch pan with nonstick cooking spray and set it aside.
  • In a large bowl using a whisk or hand mixer, whisk together the box cake mix, the lemon jello, 3/4 cup water, 3/4 cup oil, eggs, and lemon extract.  
  • Pour the cake batter into your prepared baking dish and bake your lemon poke cake for 28-30 minutes.  
  • While the cake is baking, make the lemon icing. In a small bowl, whisk together the melted butter, confectioners’ sugar, lemon juice, and lemon zest.  
  • Once the cake is done baking, place the cake on a wire rack.  Poke holes all over the hot cake using either a toothpick or a fork. Pour the glaze over the warm cake and allow the cake to cool completely before serving.
