Ingredients

  • 2 dozen strawberries, washed & dried
  • 1/2 cup heavy cream
  • 1/2 block softened cream cheese (4 ounces)
  • 1/4 cup white sugar
  • 1/2 tsp vanilla extract
  • 1 graham cracker square

Chocolate Cheesecake Filling

  • 1/4 cup chocolate chips
  • 1/2 tsp coconut oil
  • extra chocolate chips for topping if desired

Instructions

Make the Cheesecake Filling

  • Wash and dry two dozen fresh strawberries and cut the tops of the strawberries off.
  • Cut the strawberries in half length-wise and scoop out the middle of the strawberry using a spoon, if desired.*
  • In a small bowl, pour the heavy cream and mix well with either a hand mixer high speed for 2 minutes.
  • Add in your cream cheese, sugar, and vanilla extract and beat well.
  • In a sandwich bag or mini food processor, crush your graham cracker to create crumbs for the topping.

Making the Chocolate Cheesecake Filling

  • If making the chocolate filling, take half of the cream cheese mixture and place into a separate bowl.
  • In a microwave safe bowl, melt chocolate chips and coconut oil in 20 second intervals in the microwave, stirring in between each interval, until melted and smooth.
  • Pour the melted chocolate into the cream cheese mixture and mix well. Chill the chocolate mixture for at least 20 minutes before using.*

Assembling the Deviled Strawberries

  • Fill a piping bag or sandwich bag up with cream cheese filling and begin to fill the halved strawberries.
  • Sprinkle with crushed graham crackers and/or chopped chocolate chips. Enjoy!

Notes

*You can leave the strawberries as is and not scoop out the middle if you prefer.
*If making a chocolate cheesecake filling, be sure to chill the mixture for at least 20 minutes to firm back up.  The addition of chocolate makes the cheesecake mixture slightly runny, but chilling it will help it firm back up.
