Homemade Mini Pop Tart Bites
These delicious Homemade Mini Pop Tart Bites are easy to make, freezer-friendly, and are the perfect bite-sized treat for your kids lunchbox!

- 1 store-bought pie dough (contains 2) or *double my homemade pie dough recipe linked in notes below.
- 1 egg
- 1 tsp milk
Filling
- 1/2 cup strawberry preserves
- 1/2 cup nutella
Icing
- 1 cup powdered sugar
- 3-4 tsp milk
- 1/4 cup sprinkles, if using
- 1/2 tsp cinnamon, if using
Make the Mini Pop-Tarts
On a large piece of parchment paper, roll our your pie dough into a large rectangle, about 14"x18". Using a pizza cutter, cut 6 strips of dough, about 3" in width. Turn your parchment paper and cut in the other direction, 6 more strips, to create 36 square shapes.
Place about 1/2 teaspoon of your filling of choice into the middle of the squares.
Fold one side of the dough over the filling. Fold the other side of the dough over on top of the dough covering the filling to create a slender rectangle. Begin to pinch the dough pieces together to close off the seam. Take one side of the mini pop tart and pinch and fold over into the seam. Repeat on the other side.
Place seam side down onto your prepared baking sheet. Repeat the folding process with the other 35 squares.
Take a toothpick and poke 2-3 holes in the tops of each mini pop tart.
Make the Egg Wash
In a small bowl, whisk together one egg and milk. With your pastry brush, brush the tops and sides of your mini pop-tarts with egg wash.
Bake for 12 minutes until the tops are slightly golden brown. Allow the pop tarts to cool completely before adding the frosting.
Make the Icing
In a small bowl, whisk together the powdered sugar and milk. Take a spoon and drizzle the tops of the cooled mini pop-tarts. Add sprinkles if desired.
If you decide to make a cinnamon-spiced icing, after frosting your strawberry-filled pop tarts, add 1/2 teaspoon of ground cinnamon to the icing and drizzle your Nutella-filled mini pop tarts with the spiced icing.
Allow the frosting to set completely before eating or freezing. Enjoy!

To store your mini pop-tart bites, place them in an airtight container and leave them on the counter for up to 3 days.
To freeze your mini pop tarts bites, place your pop tarts on a cooling rack and place them into the freezer for 1 hour or until frozen. Move them into a labeled freezer bag. They will last in the freezer for up to 2 months.
To defrost your mini pop tart bites, take out as many frozen pop tarts as you'd like and place them on a plate on the counter to thaw. If you want to heat them up, you can place them into the microwave for about 15 seconds on 50% power until warmed through. They can be consumed at room temperature or warm.
