Delicious and Fudgy Lunchbox Brownies Recipe
These fudgy lunchbox brownies are easy to make and freeze amazingly well to have as a future school lunch dessert! The brownies are made in one bowl, making this simple recipe an easy treat any day of the week.

- 1 cup butter (2 sticks) melted
- 2 cups sugar
- 3/4 cup cocoa powder
- 4 eggs room temperature
- 2 tsp vanilla extract
- 1 1/2 cups flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 cup chocolate chips optional
Preheat oven to 350 degrees Fahrenheit and spray a 13"x9" baking dish with non-stick cooking spray. Set aside.
In a large saucepan, melt the butter. Allow to cool for 5 minutes once melted.
To the same saucepan, add in your sugar and cocoa powder and whisk well. Whisk in the eggs and vanilla extract.
To the same saucepan, add in your flour, baking powder, and salt and stir well until fully incorporated.
Optional: If using, add in your chocolate chips and fold into the brownie batter.
Using a rubber spatula, pour the batter into your prepared baking dish and bake your brownies for 30-35 minutes.
Allow the brownies to cool completely before cutting into squares. Enjoy!
