Chipotle Chicken Asado Marinade Recipe (Copycat)

This Chipotle Chicken Asado recipe is a wonderful copycat recipe!  It comes together fast, which makes it perfect for easy weeknight meals.

Ingredients
  

  • 2-3 chipotle peppers in adobo sauce
  • 2-3 tbsp adobo sauce (from chipotle peppers can)
  • 1/2 onion, quartered
  • 4 garlic cloves, smashed
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp oregano
  • 1/4 cup canola oil
  • juice of 1 lime
  • salt and pepper to taste
  • 2 tbsp canola oil to grill chicken
  • 2 lbs chicken thighs, boneless and skinless

Instructions
 

Make the Marinade

  • In a food processor, add all of the marinade ingredients together and blend until it is a smooth.

Marinate the Chicken in Fridge

  • In a freezer bag or glass bowl, add your chicken thighs and pour the chipotle marinade over the chicken.  Mix well with your hands or a spoon to ensure that the chicken is fully coated. Place the chicken in the fridge and allow the chicken to be marinated for at least 30 minutes.

Grill the Chicken

  • About 20 minutes before you begin cooking your chicken, take your marinating chicken out of the fridge and place it on the counter so that it comes to room temperature.
  • Heat your large frying pan or grill pan over medium-high heat for a few minutes and add in 2 tablespoons of oil.
  • Sear the marinated chicken on one side without moving for 5-6 minutes.  Flip the chicken over and begin cooking the other side for 7-8 minutes until the chicken is cooked through. 
  • Remove the chicken from the skillet and allow it to rest on a cutting board for 5 minutes before serving. Enjoy!
