This One-Pot Creamy Chicken and Herby Potato Skillet is a delicious dish that combines the flavors of tender chicken, creamy sauce, and fragrant herbs with hearty potatoes.

Cook your bite-sized chicken pieces in olive oil and remove from skillet.  Saute your onions & garlic.

Make a roux, by adding flour to your skillet and cooking for a few minutes.

To your skillet, add in your chicken broth.  You can also use vegetable broth if you prefer.

Whisk in your heavy cream and allow the mixture to come up to a simmer.

Add in your freshly chopped herbs. I'm using sage, rosemary, and thyme, but you can use whatever you'd like, including dried herbs!

To the skillet, add in your diced potatoes and mix well into the sauce. Make sure your potatoes are small so they cook faster.

Toss your browned chicken with any juices in the bowl, back into the skillet with the potatoes.

Bring the mixture back up to a simmer, lower the heat, and cover with a lid to cook for 20 minutes.
